Parmesan Lemon Broccoli

You will never make broccoli any other way. Ever.
Serves: 4


Ingredients

1 Large broccoli head
1 Lemon
3 Garlic cloves
1/4 Cup fresh grated parmesan cheese
3-4 Tbls olive oil
Salt
Pepper

Directions

Preheat oven to 400 degrees. Cut broccoli florets off of head and arrange in a cookie pan. Chop up garlic into fine pieces and sprinkle over broccoli. Pour olive oil over broccoli and zest a lemon over broccoli as well. Finally, grate the cheese over broccoli and toss everything together. Salt and Pepper to taste and stick it in the oven, tossing it every 10 minutes or so. Broccoli should cook until the florets are slightly browned and crispy (about 30 minutes.)

Homemade Pesto

Great on pasta, gnocchi, paninis, etc.
Serving: About 1 cup

Ingredients

1 Big bunch of basil
8 Tbls Olive oil
5 Tbls Toasted pine nuts
3-4 Garlic cloves (depending on taste)
1/3 Cup fresh grated parmesan cheese
Salt
Pepper
Directions

Place all ingredients in a food processor and grind until it is a fine liquidy sauce. Salt and Pepper to taste. Make sure not to over-grind or the basil will wilt and turn brown. Once you have the sauce, you can use it right away or store it in a closed container in the refrigerator.

Cheddar Meatloaf

I have made this meatloaf about 10 times, and it is just as good every time.
Serves: 4

Ingedients
1 1/2 pounds meatloaf mix (pork, veal, beef)
1/2 crushed Cheez-It crackers
3/4 cup shredded cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons worcestershire sauce
2 bay leaves (optional)

Directions
Preheat oven to 350 degrees.
Mix the meat, crushed crackers, cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and worcestershire in a separate bowl until smooth. Mix the eggs into the meat until evenly combined. Press into a 9x5 inch loaf pan and stick bay leaves into loaf, making sure they can be removed when finished cooking. Bake until the meatloaf is 160 degrees (about 40 minutes.) Enjoy!

Pear Goat Cheese Salad with a Honey Vinaigrette

It's a dinner and dessert all in one. 
Serves 2

Ingredients

4 Cups baby spinach 
2 Pears
1/4 Cups goat cheese
1/4 Cups red wine vinegar 
1/8 Cups rice vinegar
2 Tablespoons honey
1 1/2 Tablespoon vegetable Oil

Directions

Place spinach on plate, top with cut pears, and goat cheese. 

Put vinegars, oil, and honey in a bowl. Whisk mix thoroughly and pour on-top of salad.

Jackie's Famous Apple Crisp

This recipe varies every time since I never really measured ingredients, but it's delicious and is everyone's favorite.
Serves 6

Ingredients
6 granny smith apples
2 sticks of butter
1 cup brown sugar
1 cup white sugar
1/2 cup flour
salt
2 tbls vanilla extract
2 eggs
4 tbls lemon juice
3/4 cup oats

Directions:
Preheat oven to 350 degrees.
Peel, pit, and cut apples into small wedges. Place apples aside in a bowl with the lemon juice.
In a skillet, melt the butter and add brown sugar and white sugar. Once ingredients have turned to a liquid, mix in vanilla extract and dash of salt. When combined, place into a bowl and mix in the flour, eggs, and oats. Mixture should be like a heavy liquid paste (if not, add ingredients to reach right consistency.) Once the paste mixture is ready, lay the apples in a casserole dish or rectangle glass dish, so that the apples cover the bottom. Pour mixture over the apples. If you have any extra oats, you can sprinkle some on top. Place into oven and bake for 30-40 minutes, or until top has a browned crispy look.

Tater Tot Casserole

A hearty, delicious breakfast, lunch or dinner!
Serves 6

Ingredients
1 lb shredded cheddar cheese
1- 2lb bag of tater tots
4 eggs
1/2 cup milk
1 roll ground savory sausage
1 Onion (optional)

Directions
Preheat oven to 350.
Ground up sausage and saute in pan until cooked through. Saute Onions until caramelized. Place sausage on the bottom of a casserole dish or rectangle glass dish. If using Onions, layer over sausage. Spread half portion of cheese ontop of sausage. Layer tater tots on top of the cheese and sausage. Beat the eggs and milk together and pour on top of tater tots. Finally, spread the remaining cheese over top and pop in the oven for 30-40 minutes or until tater tots are golden brown.

Cola Burgers

Possibly the best burger to ever be made.
Serves 2

Ingredients
.8 lbs ground beef
tablespoon parmesan cheese
4 tablespoons french dressing
3 tablespoons coke
5 crumbled saltines
salt
pepper

Directions
Mix all of the ingredients besides the meat together. In a separate bowl, break up the ground beef and slowly mix the liquid mixture in. Depending on the consistency, you may not need to use the whole mixture. Meat should be gooey, but should hold together. Once mixed, form burgers into patties and grill!
Add cheese if you would like, and enjoy!

Baked Sweet Potatoe Cubes

A sweet alternative to french fries or baked potatoes.
Serves 2

Ingredients
2 Yams or sweet potatoes
2-4 tbls Olive Oil
Salt
Pepper

Directions
Preheat oven to 350 degrees. Cut the sweet potatoes into small cubes. Cover the sweet potatoes in olive oil, pepper, and salt to taste, and then toss until fully coated. Place sweet potatoes on a baking sheet and pop in the oven for 20-30 minutes or until tender and slightly crispy.

Tilapia with Butter Breadcrumb Coating

Full of flavor and delicious
Serves 2-4

Ingredients
2-4 filet's of tilapia or any other flaky white fish
1-2 cups of breadcrumbs
1 stick of butter
garlic powder
onion powder
salt
pepper

Directions
Preheat oven to 350 degrees. Melt the butter and place in the breadcrumb mixture, adding breadcrumbs until the mixture is a dough like consistency. Mix in all the spices. Pack each filet with the coating until all sides are covered. Place filets on baking sheet and bake for 15-25 minutes.

Baked French Fries

A healthy (and just as good) alternative to the fried stuff.
Serves 1

Ingredients
1 large potato
2-3 tablespoon olive oil
garlic powder
salt
pepper
onion powder

Directions
Preheat oven to 450 degrees. Cut up potatoes to desired wedge size. Cover baking pan in olive oil so that potatoes do not stick. Mix potatoes with olive oil, and the rest of the ingredients so that all sides are covered. Place on the baking sheet and put in the oven for 45 minutes, checking regularly and making sure to flip potatoes.

Chicken Gyro with Tzatziki Sauce

A simple, yummy, and healthy option.
Serves 2-4 people

Ingredients
Pita Bread
Chicken Breasts
2 Tomatoes
Lettuce
5-8 garlic cloves (depending on taste)
1 lemon
1 container of sour cream
Cucumber
Salt
Pepper
Rosemary
3 tablespoons olive oil

Directions:
Chicken: 15 minutes marinade time
Put chicken in a container in order to marinate. Pour olive oil over chicken to coat. Throw some salt, pepper, and rosemary in. Cut lemon in half and squeeze a little bit into the marinade. Put chicken aside and let marinade for atleast 15 minutes.

Tzatziki sauce- 20 minutes marinade time
Dice up the garlic into tiny pieces and put into the sour cream. Clean the cucumber and shred (with skin on) making sure to drain most of the juices out. Put the cucumber into the sour cream mixture, and then squeeze atleast half the lemon into the mixture. Salt and pepper to taste, and let the mixture meld together in the refrigerator for atleast 20 minutes.

When chicken is ready, grill to taste and then dice up and put on the pita bread. Put all the condiments on the pita and enjoy!
